Quilted Kitchen Presents King Ranch Casserole Recipe & Table Topper

King Ranch Casserole Recipe:

Ingredients:
1 ½ c. cooked chicken or turkey
1 can Rotel® (regular or mild)
1 small can mushrooms
1 c. frozen corn
2 teaspoons Cumin
¼ teaspoon Oregano
¼ teaspoon Garlic powder
1 ½ c. grated cheddar cheese
Black pepper to taste
½ c. chicken stock
12 corn tortillas

Instructions:
Preheat oven to 350º. Combine all ingredients in a bowl except the chicken stock and tortillas. Using a glass baking dish (deep or wide, doesn’t matter), begin layering the corn tortillas on the bottom, then the meat mixture, then some cheese. Repeat the layering, making sure the cheese covers the top well. Pour the chicken stock over everything, to soak into the tortillas. Bake for 45 minutes or until the cheese is melted and lightly browned.

    Thanks Sandy – it is delish, for sure! Wonderful use of leftover chicken or turkey – we save all our leftover bird meat and use it in this, just bag it in a freezer bag until we have enough to use. And, ummm, if it’s healthy, you probably won’t find it here . I can tell you I always cook with low sugar & low sodium foods, because my husband can’t have much of either. But, as far as nutritional info? I’m afraid I cook for taste & pleasure and have no earthly idea what the nutritional value is!

    I can’t wait to try both. I cook for kids-son, DL, and grand each week and this looks like a winner. I also need to make a new tablerunner and placemats. I think I could make placemats with the three blocks using all the same fabrics in all.

    Thanks Ladies! I’m glad ya’ll like what I have to offer. I’ll be posting a new recipe and quilted kitchen project once a month. My husband thanks ya’ll, too – I let him handle cooking duties most of the time, but he sure enjoys it when I jump in and whip up a feast!
